South Beach Baked Shrimp
Ingredients
8 ea jumbo shrimp, cleaned
4 Tbsp. lemon juice
1/2 c chopped parsley
1/2 c Smart Balance or other acceptable margarine
3 cloves garlic (minced)
2 tsp paprika
1 c whole wheat bread crumbs
Butterfly shrimp but don't cut all the way. Spread and flatten. Place shrimps in individual baking dishes. Sprinkle with portion of lemon juice.
Combine 5 tablespoons of the parsley, margarine and garlic in a bowl. Place some of the mixture on each shrimp. Combine remaining parsley, crumbs and paprika and sprinkle over each shrimp.
Bake at 400 degrees for 15 minutes or until done.
Its very tasty...

I was googelin for a shrimp recipe and I comed across you.
I actually did this one last might and it was very tasteful. Took me about 20 minutes to do it. I am a sucker for see food. If this is a diet am on to it.

Please note that the bread crumbs are to be used in phase 2 not phase 1
