OK I did a google search and found some recipes. I will post some of the phase 1 recipes here:
Chicken Pizza Packets - South Beach Diet Recipe (Phase 1)
1lb boneless chicken breasts, cut into 1" pcs
2T olive or vegetable oil
1 small zucchini, thinly sliced
16 pepperoni slices
1 small green pepper, julienned
1 small onion, sliced
1/2 t dried oregano
1/2 t dried basil
1/4 tsp salt
1/4 t garlic powder
1/4 t pepper
1 cup halved cherry tomatoes
1/2 C shredded mozzarella cheese
1/2 C shredded parmesan cheese
In a large bowl, combine the first 11 ingredients. Coat four pieces of heavy duty (12" square) aluminum foil with nonstick cooking spray. Place a quarter of chicken mixture in center of each piece. Fold foil around mixture & seal tightly. Grill, covered over medium high heat for 15-18mins or until chicken juices run clear.
Carefully open each packet. Sprinkle w/ tomatoes & cheeses. Seal loosely; grill 2 mins
Greek Salad - South Beach Diet Recipe (Phase 1)
8 leaves romaine lettuce, torn into bite sized pieces
1 cucumber, peeled, seeded, and sliced
1 tomato, chopped
1/2 cup sliced red onion
1/2 cup crumbled reduced fat feta cheese
2 T extra virgin olive oil
2 T fresh lemon juice
1 teaspoon dried oregano leaves
1/2 teaspoon salt
Combine the lettuce, cucumber, tomato, onion, and cheese in a large bowl.
Whisk together the oil, lemon juice, oregano, and salt in a small bowl. Pour over the lettuce mixture and toss until coated.
Grilled Salmon with Rosemary - South Beach Diet Recipe (Phase 1)
1 pound salmon
2 teaspoons extra-virgin olive oil
2 teaspoons fresh lemon juice
1/4 teaspoon salt
Pinch freshly ground black pepper
2 cloves garlic, minced
2 teaspoons fresh rosemary leaves, chopped, or 1 teaspoon dried, crushed
Fresh rosemary sprigs (optional)
Capers (optional)
Cut the fish into 4 equal-size portions. Combine the olive oil, lemon juice, salt, pepper, garlic, and rosemary in a bowl. Brush the mixture onto the fish.
To grill, arrange the fish on a grill rack or use a grill basket sprayed with olive oil cooking spray. Grill over medium-hot coals until the fish flakes easily (allow 4-6 minutes per 1/2" of thickness). If the fish is more than 1" thick, gently turn it halfway through grilling.
To broil, spray the rack of a broiler pan with olive oil cooking spray and arrange the fish on it. Broil 4" from the heat for 4-6 minutes per 1/2" of thickness. If the fish is more than 1" thick, gently turn it halfway through broiling.
To serve, top the fish with capers, if using, and garnish with rosemary sprigs, if desired.
Gulf Coast Shrimp And Vegetables - South Beach Diet Recipe (Phase 1)
INGREDIENTS
1 tablespoon olive oil
1 large onion, cut into thin wedges
1 small red bell pepper, cored, seeded, cut into thin strips
2 cloves garlic, minced
1/4 teaspoon salt (optional)
1 pound medium or large shrimp in the shell,
peeled and deveined (about 12 ounces after peeling)
1 zucchini, cut into thin 2-inch-long strips
1 tablespoon chopped fresh thyme, or 1 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
DIRECTIONS
Heat the oil in a large non-stick skillet over medium-high
heat. Add the onion, red pepper, and garlic. Saute until limp, about 3 minutes. Sprinkle with salt, if desired.
Push the onion mixture to the edges of the skillet. Add the
shrimp and zucchini; sprinkle with thyme and red pepper flakes.
Saute until the shrimp are opaque, 4 to 5 minutes.
Toss to mix well. Serve immediately.
Roasted Portobello Salad with Blue Cheese - South Beach Diet Recipe (Phase 1)
3 tablespoons red-wine vinegar; 1 tablespoon Dijon mustard; salt and pepper; 2/3 cup olive oil; 4 portobello mushrooms (1 1/2 pounds), stems trimmed; 3 heads endive, sliced crosswise 1/2 inch thick (about 4 cups); 8 oz. mesclun or mixed salad greens (about 10 cups); 1 small red onion, thinly sliced; 4 oz. blue cheese
1.)Preheat oven to 450 degrees. In a medium bowl, whisk together vinegar, mustard, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Slowly add olive oil, whisking to emulsify. Set aside 1/2 cup dressing to toss with the greens.
2.) Place mushrooms, stem side up, on a baking sheet. Coat both sides with some of the remaining dressing. Roast mushrooms, brushing with more dressing every five minutes, until they are tender, about 15 minutes.
3.) Toss the endive, mesclun (or mixed greens), onion, and cheese with reserved dressing, and divide among salad bowls. Cut portobellos 1/2 inch thick, and arrange a few slices over each serving
Roasted Veggies & Ricotta Crème - South Beach Diet Recipe (Phase 1)
Oven-Roasted Vegetables
1 med zucchini, cut into bite-size pieces
1 med summer squash, cut into bite-size pieces
1 med red bell pepper, cut into bite-size pieces
1 med yellow bell pepper, cut into bite-size pieces
1 lb fresh asparagus, cut into bite-size pieces
1 red onion, chopped
3 Tbsp extra virgin olive oil
1 tsp salt
½ tsp black pepper
1. Preheat the oven to 450°F. Place the zucchini, squash, bell peppers, asparagus, and onion in a large roasting pan, and toss with the oil, salt, and black pepper. Spread in a single layer.
2. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.
Salsa Omelet - South Beach Diet Recipe (Phase 1)
Add as much or as little of these items as you want I don't use a certain amount)
low fat ham
green peppers (chopped)
onion (chopped)
mushrooms
1 slice low fat cheese
salsa
2 eggs
Take ham, onion, green peppers, & mushrooms and cook in a frying pan with a little water. After everything is cooked enough for your tastes put them on a plate. Take 2 eggs (or egg beaters whichever you prefer) and scramble in a bowl with a little water. Then spray pan with butter flavored spray and put in eggs. Spread to fit bottom of pan then cover it cooking on low heat. When eggs seem completely cooked, put cooked veggies on one side of the flattened egg, place half a slice of the cheese on top. Let it melt a little (you can put the cover back on so it will melt faster or just leave it there for a few minutes. Then take a little salsa and spread on top of the cheese. Fold the side of the egg that has nothing on it over top of the veggies and cheese, then put the other half of the slice of cheese on top of the omelet. Take out of the frying pan and top with a little more salsa. |

Shredded Chicken Salad - South Beach Diet Recipe (Phase 1)
THIS RECIPE INTENDED FOR PHASE ONE OR PHASE TWO
1.) In a skillet, bring one cup of salted water to a simmer. Add TWO BONELESS SKINLESS CHICKEN BREASTS, cover, cook over low heat five minutes. Turn off heat; let steam five minutes. Shred chicken with a fork.
2.) Cut one head ICEBERG LETTUCE and 2 RED BELL PEPPERS into strips; slice 3 SCALLIONS. Quarter 1 CUCUMBER lengthwise; slice thinly. Combine vegetables and chicken; season with salt.
3.) Toss with PEANUT VINAIGRETTE and 2 tablespoons CHOPPED PEANUTS
Sirloin Tips and Mushrooms - South Beach Diet Recipe (Phase 1)
Makes 6 servings.
3 tablespoons olive oil
3 cloves garlic, minced
1 1/2 pounds beef sirloin
1 1/2 cup of fresh mushrooms, chopped
1 cup of fresh tomatoes pureed in food procesor
salt to taste
freshly ground pepper, to taste
3/4 cup red cooking wine
Directions
1 Cut beef into cubes. In a large skillet over
medium/high heat, heat the olive oil and brown beef cubes
with the garlic.
2 Add mushrooms , pureed tomato , salt, pepper
and red cooking wine. Cook for 30 minutes or until beef cubes are
tender. Add a little more cooking wine while cooking if desired.
South Beach Chopped Salad with Tuna - South Beach Diet Recipe (Phase 1)
Ingredients
1 can (6 ounces) water-packed tuna
1/3 cup chopped cucumber
1/3 cup chopped tomato
1/3 cup chopped avocado
1/3 cup chopped celery
1/3 cup chopped radishes
1 cup chopped romaine lettuce
Dressing
4 teaspoons extra-virgin olive oil
2 tablespoons fresh lime juice
2 cloves garlic, finely chopped
1/2 teaspoon black pepper
Instructions
To make the salad: Layer the tuna, cucumber, tomato, avocado, celery, radishes, and lettuce in a decorative glass bowl.
To make the dressing: Mix the olive oil, lime juice, garlic, and pepper. Drizzle over the salad.
Southwestern Ground Beef Chili - South Beach Diet Recipe (Phase 1)
Ingredients:
2 1/2 lbs Ground Beef
1/2 small chopped onion (lg chop)
1 small green bell pepper (lg chop)
1 small red bell pepper (lg chop)
2 tablespoons vegetable oil
1/2 bunch fine chopped fresh cilantro
4 tablespoons chili powder
3 tablespoons ground cumin
2 tablespoons chopped garlic in oil
1/4 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon granulated garlic or garlic powder
Method:
Place the vegetable oil , peppers and onions in a large skillet and cook over a medium high heat until slightly tender. Add in the ground beef and spices and brown .
Cook until well done , stirring all the while. Skim off excess grease as it cools.
Spicy and Tangy Shrimp - South Beach Diet Recipe (Phase 1)
2 cups shrimp (large works best), peeled
1 tablespoon olive oil
1/2 tablespoon cayenne pepper
1/2 to 1 dash of rosemary- dried or fresh, crushed
1 1/2 teaspoons minced garlic
1 tablespoon hot red chili pepper
Heat oil with garlic and peppers, stir in skillet. When steam begins to rise, add shrimp and stir. Once shrimp turns red add rosemary and let it cook for a few more minutes. |
